Chennai’s Savera Hotel has been busy regardless of the lockdown. Nina Reddy, joint managing director of the lodge, says that when Janata Curfew was introduced on March 22, she requested 120 of her employees to transfer into the lodge whereas the relaxation (over 700, together with all girls) have been instructed to keep dwelling.

“We transformed our conference halls into dormitories. Next, we moved the guests staying in ten different rooms to one floor and switched off the AC and heater on all the other floors,” says Nina. Nina provides, “I got in touch with Friends of Police, and they said they needed 1,000 packed vegetarian meals every day. The lodge’s fashionable cafe, Brew Room, is now working from the Freeze Zone ice cream parlour premises on TTK Road, Alwarpet, whereas the parlour has moved to Radhakrishanan Salai close by. Brew Room is focussing on breads, pizza base, muffins, and cookies for now.

“We are doing whatever we can to salvage the situation,” says Nina, including that for the first time ever Savera has additionally launched a takeaway service.

“For Ramzan, we’re providing mutton and rooster in addition to vegetable biryani as takeaway. We provide Ambur fashion biryani (mutton and rooster) made with basmati as a substitute of seeraga samba, hand pounded pink chilli and charcoal dum. It is packed in a metal field for Ramzan, and the combo has three kilo of mutton/rooster biryani, six boiled eggs, 12 items of fried rooster, 12 items of gulab jamoon together with curd raitha and brinjal gravy,” says Chef Jesu govt chef at Savera.
